Turkey Meatballs

Wow summer flew by! Does any body else have a priority shift in the summer time? I got lost in all the activities and put my writing on the way side. Hopefully this fall brings more cooking and inspiration. This meatball recipe is a great transition dish. I know some people hang on to summer until the snow flies and others are ready for crockpots and wool socks. These meatballs are great addition to a summery dish or fall comfort food.

My favorite thing about this recipe is that I always have most of the ingredients available in my kitchen and that it takes no time at all. For this batch all I had to pick up was some ground turkey. You definitely don’t need to use all of the seasonings I do. The basil is the most important spice, I often mince up fresh basil and add that in instead.

1 lb ground turkey
1 egg
1/2 cup Italian bread crumbs
1/4 cup chopped onion
1/3 cup shredded parmesan
1/2 teaspoon minced garlic
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon salt
1/2 teaspoon pepper

1. Preheat oven to 375
2. Grease a baking sheet
2. Put all the ingredients in a bowl and mix it up! I find that using my hands is the best method. It’s gross at first, but you are ensuring that everything is mixed up well.
4. Form approximately one inch balls with your hands
5. Cook for 15 to 20 minutes depending on your oven. As always with poultry make sure you reach at least 160+ for 15 seconds
*After about 10 minutes I quickly shake the pan to insure the meatballs aren’t sticking to the pan.

I love these meatballs because they are flavorful, a great texture, and actually pretty healthy! Add them to a pasta sauce, with veggies, or just for a snack by themselves. Get creative with different spices and see where your flavor profile takes you!
